Ingredients
  

  • 1 package puff pastry sheet keep cold for best puff
  • 8 oz Brie cheese cut into small pieces
  • 1/2 cup fresh cranberries chopped or whole
  • 2 tablespoons sugar preferably granulated
  • 1 tablespoon orange juice freshly squeezed or bottled

Method
 

  1. Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry on a lightly floured surface to smooth out creases, then cut into 24 small squares about 2 inches each.
  3. Place the pastry squares evenly spaced on the prepared baking sheet.
  4. Carefully dollop about 1 teaspoon of Brie cheese into the center of each pastry square, pressing gently to spread it out slightly.
  5. In a small bowl, mix chopped cranberries with sugar and a splash of orange juice until well combined.
  6. Using a small spoon, top each Brie-filled pastry square with a small spoonful of the cranberry mixture, spreading it slightly over the cheese.
  7. Bake in the preheated oven for 15-20 minutes, or until the pastry is golden and puffed, and the Brie is bubbling and slightly browned.
  8. Remove the baking sheet from the oven and let the bites sit for 5 minutes to set.
  9. Gently transfer the bites to a serving platter and drizzle with honey or balsamic glaze if desired for extra sweetness and shine.
  10. Serve warm or at room temperature, enjoying the crispy exterior, melty Brie, and tart cranberry topping in every bite.
