Place the pineapple chunks and mint leaves into the blender.
Add honey, lime juice, and water to the blender.
Blend everything on high for about 30 seconds until the mixture is smooth and fragrant, with tiny green flecks of mint visible.
Taste the mixture and adjust sweetness or acidity if needed, adding more honey or lime juice.
Pour the bright, fragrant blend into popsicle molds, filling each almost to the top.
Insert sticks into the molds and place the trays in the freezer.
Freeze for at least 4 hours, preferably overnight, until the popsicles are firm and icy.
To serve, run warm water briefly over the outside of each mold to loosen the popsicles, then gently pull them out.
